It isn't what they do but the fact they do it.
You try dealing with something as life changing as that and then going on to be better then the average guy/gal.
The super human spirit or will at the very least.

Yea let's see them compete against a person with all of his body in tact and see how super human they are. How about let's just call them what they really are, super disabled.

Not superhuman, That would be having an extra ability like flying or laser eyes. A lot of these people need man made equipment to do what they do and any non disabled person could have a go. Superhuman is the wrong word! Determinds would be better. Take the mans wheelchair away and would he be 'Super Human'? No, he'd just flail around the floor a bit.

Not sure I would say "Super humans". What about "incompletes" or "mostly humans". If we lower the bar enough - they are all "winners".
